A great soup for Fall and Spring, because it is a light soup with a soft flavor. Eat a nice whole wheat or cheese bread with it, to round it out for a whole meal.
Hardly any work! All you do is slice onions and mushrooms, and wash the spinach.
The ingredients are for 2 people, just add more tortellini and spinach if unexpected guests show up:)
If you had a big or late lunch that's heavy on the stomach, this is the perfect soup for dinner!
TORTELLINI SOUP
IngredientsSaute in hot oil:
1 Tablespoon of olive oil
1 1/ cup sliced onions
1 package of mushrooms , slice
In same soup pan, add and bring to a boil
4 cups or more chicken bouillon (I normally take water and 1-2 bouilloncubes)
8-9 oz (1 cup) of dry tortellini (if you buy the refrigerated ones, add at end)
When tortellini is done (al dente) stir in
1/2 bunch fresh spinach leaves (for more than 2 people, add more)
Serve with grated Parmesan cheese on top
Variations
Add chicken meat, carrots, etc.Aah, I was in such a hurry to eat that the first 5 people who commented,do not know I wished them "Mange, Mahlzeit, Smakelijk eten, Bon Appetit, in short...have a hearty meal!

I love soups - almost any kind. This has all my favorite things in it and I know I'll try it.
Soup has a marvellous sharing quality, doesn't it? Just add a few more veg, another handful of pasta and voila! you can feed a crowd.
I get hungry just reading the recipe. It sounds great. I would add strips of omelet. Mmm...
It sounds delicious! I wonder if it can be made with something other than bouillon - I have sodium issues since my stroke, and bouillon is loaded with the stuff. Sigh. I'll have to research that!

My sense is that people familiar with Asian diet will like this - pretty similar to noodle soup, but the filling of the tortellini will determine the taste.

OH I LOVE soup. I make a similar one but a HUGE pot full so we can have the kids over and even some left overs if we are lucky, I use the 3 cheese tortellini, cabbage, carrots, of course onion, and some Italian sausage rolled into yummy meatballs! There are so many fun soups to just make up in the winter! LOVE LOVE LOVE winter soups! thanks for sharing this (for two) recipe! hugs and smiles

I can tell you're really into soups:) Great idea to add cabbage, carrots and sausage. When my kids were still at home and their friends were over I wasn't into soups yet -more into pasta casseroles. Hugs:):)
