TORTELLINI SALAD FOR A LAZY HOT WEEKDAY



This is a favorite salad of mine - a yummy and satisfying meal, and not much work  when you are in 90+degree  Fahrenheit weather (which you don't want to do when there's a heat wave!).  Sorry, I don't remember where I got this recipe.

Ingredients

1.  2 cups uncooked tortellini


2.  1/4 cup white wine vinegar
     3 Tablespoons olive oil
     1 teaspoon sugar
     1/2 teaspoon salt
     1/4 teaspoon black pepper

3.  1 medium yellow bell pepper
     1 medium red bell pepper
     1 medium tomato

4.  6 oz. jar marinated artichoke hearts

5.  3 cups watercress or arugula

Quantity for tortellini is for two people. Any filling in the tortellini will do. Cook the tortellini in boiling water for about 10 minutes, like you do spaghetti, or get refrigerated or frozen). Cool off (put the pan outside to cool off the steam!)

Combine ingredients on number 2  in the dish you'll serve the salad in. This is your "dressing." Then add tortellini when cooled off.

Cut up bell peppers  and tomato (number 3)

Add the artichoke hearts (sometimes I add some of the marinating fluid in the jar). You may add artichoke hearts from scratch, but then you may need to add some more "dressing"

Strip the watercress leaves from the stems and add when tortellini has totally cooled off.  (so it will not wilt the watercress! I speak from experience:). I seldom add 3 cups  -  just the bunch that I bought.

Bon Appetite! Mange! Eet Smakelijk!  Mahlzeit! 


Where's the dessert? Of course....ice cream!

If you like spaghetti, this has a more subtle taste to it! I don't think you'll be disappointed:)

I often do this both in winter as in summer! I love it: it's tasty and easy to make. Are bell peppers the same as capsicum in Australia? We call them paprika.
Thanks for your visit. How strange that you couldn't find the sculpture. I didn't realise that they had moved it from it's original place. Tourist Information should have known about this.

Jeannette I found this on a site about the monument:

On 14 May 2007 the mayor of Rotterdam had the monument placed back at its prominent place on Plein 1940 , after an absence of some time for restoration.

Maybe it was during the time of this restoration that you were in Rotterdam.

I bet I can make this dish very WW points wise. Sounds great. Using your ingredients, the only points are inthe tortellini which you can control easily

Oooooh! Finally a pasta salad that looks easy enough for me to make! Usually they have a billion ingredients, of which I may have one or two. This is perfect! I must try it! Then ... yeah! Bring on the ice cream!

Yes, I believe it's what we call in Holland "Paprika" - they're here available in a green, red, or yellow color -the last two are a little bit sweeter in taste.

I don't know why our friends living in Rotterdam couldn't find Zadkine's sculpture - we were there in 2004. Thank you much -so sweet of you to look it up!
