I FEEL LIKE TORTELLINI SOUP TODAY

Before you start reading the recipe, click on the Art Notes
(right side bar) painting I just posted.
I don't know if I ever want to part with it
(but you can have a print:) )!

A great soup for Fall and Spring, because it is a light soup with a soft flavor. Eat a nice whole wheat or cheese bread with it, to round it out for a whole meal.
Hardly any work! All you do is slice onions and mushrooms, and wash the spinach.
The ingredients are for 2 people, just add more tortellini and spinach if unexpected guests show up:)
If you had a big or late lunch that's heavy on the stomach, this is the perfect soup for dinner!
TORTELLINI SOUP
Ingredients

Saute in hot oil:
1 Tablespoon of olive oil
1 1/ cup sliced onions
1 package of mushrooms , slice

In same soup pan, add and bring to a boil
4 cups or more chicken bouillon          (I normally take water and 1-2 bouilloncubes)
8-9 oz (1 cup) of dry tortellini                   (if you buy the refrigerated ones, add at end)

When tortellini is done (al dente) stir in
1/2 bunch fresh spinach leaves           (for more than 2 people, add more)

Serve with grated Parmesan cheese on top

Variations
Add chicken meat, carrots, etc.

Aah, I was in such a hurry to eat that the first 5 people who commented,do not know I wished them  "Mange, Mahlzeit, Smakelijk eten, Bon Appetit, in short...have a hearty meal!

I love soups - almost any kind. This has all my favorite things in it and I know I'll try it.

Soup has a marvellous sharing quality, doesn't it? Just add a few more veg, another handful of pasta and voila! you can feed a crowd.

I get hungry just reading the recipe. It sounds great. I would add strips of omelet. Mmm...

It sounds delicious! I wonder if it can be made with something other than bouillon - I have sodium issues since my stroke, and bouillon is loaded with the stuff. Sigh. I'll have to research that!

Suzana,
Thank you! It seems they eat more soup here in the US than (I did) in Europe. How about you- frequent or not?

Maria,
I saw kids in your side bar -are they yours? If so, maybe you can add alphabet pasta?

Norah,
You'll like it! We artists often want simple cooking that doesn't require hours -more time for painting:)

Stephanie,
I never was fond of soups until I tasted one time a home made soup (my mother never made home made soup) and I was sold, and have looked for recipes.

Irene,
Now why didn't I think of that! Excellent idea... you must be Dutch!

Clytie,
There must be something for people who have a low-sodium diet, but I don't know much about it, to tell you the truth. Hey, good to see you here again, girl -where have you been?? Hope it's not something serious?

Lillie,
My sense is that people familiar with Asian diet will like this - pretty similar to noodle soup, but the filling of the tortellini will determine the taste.

Mmmm, that sounds great. It's definitely a soup day here today. The weather is cool and foggy.

How are you Jeannette? I have been out of circulation in the blog reading dept, barely able to post let alone read anything.

Love the photo of you and the new do. It's very becoming.

Tortellini soup sounds great. Going to read some of your posts now and look for new art!

OH I LOVE soup. I make a similar one but a HUGE pot full so we can have the kids over and even some left overs if we are lucky, I use the 3 cheese tortellini, cabbage, carrots, of course onion, and some Italian sausage rolled into yummy meatballs! There are so many fun soups to just make up in the winter! LOVE LOVE LOVE winter soups! thanks for sharing this (for two) recipe! hugs and smiles

Jen,
Try it - I think you'll like it -I'll visit soon to see how you're doing!

California Girl,
Thank you! Hope the reason for your hiatus was not serious...in Nov. I'll post a pastel I think you really will like. Glad to see you back, friend!

Linda,
I can tell you're really into soups:) Great idea to add cabbage, carrots and sausage. When my kids were still at home and their friends were over I wasn't into soups yet -more into pasta casseroles. Hugs:):)

Vicki,
Oh, I remember leaf raking from the time in Holland that we rented a house in the woods -an endless task! You'll like any soup after that:)
